- 2 lbs pork shoulder
- 1 cup BBQ sauce
- 2 cups cooked rice
- 1 cup coleslaw
- 1/2 cup pickled jalapeños
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat your oven to 300°F (150°C).
- Season the pork shoulder with salt and pepper.
- Place the pork in a roasting pan and cover it with BBQ sauce.
- Cover the pan with foil and cook in the oven for 4-5 hours until the pork is tender.
- Remove the pork from the oven and shred it using two forks.
- In a bowl, serve a portion of rice topped with the pulled pork.
- Add coleslaw, pickled jalapeños, and green onions on top.
- Drizzle additional BBQ sauce if desired and serve warm.
Notes
- For a spicier kick, add more jalapeños.
- Can substitute pork with chicken for a lighter option.
- Leftover pulled pork can be stored in the refrigerator for up to 3 days.
