- 2 boneless chicken breasts or thighs
- 1/2 cup barbecue sauce
- 2 cups shredded cabbage (green or purple)
- 1 cup shredded carrots
- 1/2 cup mayonnaise
- 1/2 cup ranch dressing
- 4 flour tortillas
- 1 avocado (optional)
- 1/2 cup pickled red onions (optional)
- 1 jalapeño (optional)
- Chips (for serving)
- Fresh fruit salad (for serving)
Instructions
- Grill the chicken: Season your chicken with salt and pepper. Preheat the grill to medium-high heat. Grill the chicken for 6-7 minutes on each side until it reaches an internal temperature of 165°F. Toss the grilled chicken in barbecue sauce and let it rest before slicing.
- Make the coleslaw: In a large bowl, combine the shredded cabbage and carrots. Mix in mayonnaise and ranch dressing, seasoning with salt and pepper to taste.
- Warm the tortillas: Heat the tortillas in a skillet for about 30 seconds on each side or microwave for 20 seconds.
- Assemble the wraps: Lay a warm tortilla flat. Place grilled chicken slices in the center, followed by a generous scoop of coleslaw.
- Add toppings: Enhance your wrap with avocado, pickled onions, or jalapeños as desired.
- Roll & serve: Tuck in the sides of the tortilla and roll it tightly around the filling. Serve immediately with chips or fruit salad.
