- 1 lb shrimp, peeled and deveined
- 1 cup rice
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 2 tbsp sriracha
- 1 cup mixed vegetables (like bell peppers and carrots)
- 2 tbsp green onions, chopped
- Salt and pepper to taste
Instructions
- Cook the rice according to package instructions.
- In a bowl, mix mayonnaise, sweet chili sauce, and sriracha to create the Bang Bang sauce.
- In a skillet, heat oil over medium heat and add the shrimp, seasoning with salt and pepper.
- Cook the shrimp until they are pink and crispy, about 3-4 minutes per side.
- Toss the cooked shrimp in the Bang Bang sauce until well coated.
- Assemble the bowl by placing rice at the bottom, followed by mixed vegetables and the Bang Bang shrimp on top.
- Garnish with chopped green onions and serve immediately.
Notes
- Adjust the spiciness of the sauce by adding more or less sriracha.
- Feel free to use any vegetables you prefer.
- This dish can be made with chicken or tofu for a different protein option.
