- 2 ripe bananas, mashed
- 1 cup rolled oats
- 1/4 cup maple syrup (optional)
- 1/2 cup milk (dairy or non-dairy)
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup chocolate chips or blueberries (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Combine the mashed bananas, oats, and milk in a large bowl to form a smooth batter.
- Add the maple syrup, baking powder, baking soda, cinnamon, and salt. Stir until fully incorporated.
- Fold in the chocolate chips or blueberries, being careful not to overmix.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
Notes
These muffins freeze well for up to three months. Reheat in the microwave or oven before serving.
