Description

Delicious and versatile Banana Oatmeal Muffins that are perfect for breakfast, snacks or dessert.


Ingredients

  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/4 cup maple syrup (optional)
  • 1/2 cup milk (dairy or non-dairy)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or blueberries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the mashed bananas, oats, and milk in a large bowl to form a smooth batter.
  3. Add the maple syrup, baking powder, baking soda, cinnamon, and salt. Stir until fully incorporated.
  4. Fold in the chocolate chips or blueberries, being careful not to overmix.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick comes out clean.
  7. Cool in the tin for a few minutes, then transfer to a wire rack to cool completely.

Notes

These muffins freeze well for up to three months. Reheat in the microwave or oven before serving.
