  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour (for crumble)
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your muffin tin.
  2. Combine melted butter with mashed bananas until creamy.
  3. Stir in the sugar, mixing thoroughly.
  4. Add the beaten egg and vanilla extract, blending well.
  5. Sprinkle baking soda and salt over the mixture and fold in gently.
  6. Stir in the flour until just combined.
  7. Mix brown sugar, 1/4 cup flour, and cinnamon until crumbly for the topping.
  8. Sprinkle the crumble over the muffin batter in the tin.
  9. Bake for 18-20 minutes until a toothpick comes out clean.
  10. Cool for a few minutes before transferring to a wire rack.

Notes

For a make-ahead option, prepare the batter the night before and refrigerate. You can also experiment with adding chocolate chips or nuts for extra flavor.
