Description

Ingredients

  • 2 ripe bananas, mashed
  • 4 cups all-purpose flour
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1/2 cup warm milk
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 cup brown sugar
  • 1 cup powdered sugar for glaze
  • 2 tbsp milk for glaze
  • 1 tsp vanilla extract for glaze

Instructions

  1. Activate the yeast: In a small bowl, combine warm milk and sugar. Sprinkle yeast over the top and let it sit until frothy, about 5-10 minutes.
  2. Mix wet ingredients: In a large bowl, mix the mashed bananas, melted butter, eggs, and vanilla extract until smooth.
  3. Combine mixtures: Add the yeast mixture to the banana mixture. Stir until fully incorporated.
  4. Add dry ingredients: Gradually mix in flour, cinnamon, nutmeg, and salt until a soft dough forms.
  5. Knead: On a floured surface, knead the dough for about 5-7 minutes until smooth and elastic.
  6. First rise: Place the dough in a greased bowl, cover with a towel, and let it rise until doubled in size, about 1 hour.
  7. Roll out: Roll the dough into a rectangle (10×15 inches) and spread melted butter evenly across the surface.
  8. Add filling: Sprinkle brown sugar and cinnamon mixture evenly over the dough.
  9. Rolling up: Roll the dough tightly into a log.
  10. Cut into rolls: Slice the log into about 12 equal pieces and place them in a greased baking dish, cut side up.
  11. Second rise: Cover the rolls and let them rise for another 30 minutes while preheating the oven to 350°F (175°C).
  12. Bake: Bake for 25-30 minutes until golden brown.
  13. Prepare the glaze: Mix powdered sugar, milk, and vanilla until smooth.
  14. Serve: Drizzle the glaze over warm rolls.

Notes
