- 2 ripe bananas, mashed
- 4 cups all-purpose flour
- 1 packet (2 1/4 tsp) active dry yeast
- 1/2 cup warm milk
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted

- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1 cup brown sugar
- 1 cup powdered sugar for glaze
- 2 tbsp milk for glaze
- 1 tsp vanilla extract for glaze
Instructions
- Activate the yeast: In a small bowl, combine warm milk and sugar. Sprinkle yeast over the top and let it sit until frothy, about 5-10 minutes.
- Mix wet ingredients: In a large bowl, mix the mashed bananas, melted butter, eggs, and vanilla extract until smooth.
- Combine mixtures: Add the yeast mixture to the banana mixture. Stir until fully incorporated.
- Add dry ingredients: Gradually mix in flour, cinnamon, nutmeg, and salt until a soft dough forms.
- Knead: On a floured surface, knead the dough for about 5-7 minutes until smooth and elastic.
- First rise: Place the dough in a greased bowl, cover with a towel, and let it rise until doubled in size, about 1 hour.
- Roll out: Roll the dough into a rectangle (10×15 inches) and spread melted butter evenly across the surface.
- Add filling: Sprinkle brown sugar and cinnamon mixture evenly over the dough.
- Rolling up: Roll the dough tightly into a log.
- Cut into rolls: Slice the log into about 12 equal pieces and place them in a greased baking dish, cut side up.
- Second rise: Cover the rolls and let them rise for another 30 minutes while preheating the oven to 350°F (175°C).
- Bake: Bake for 25-30 minutes until golden brown.
- Prepare the glaze: Mix powdered sugar, milk, and vanilla until smooth.
- Serve: Drizzle the glaze over warm rolls.
Notes
Make ahead by preparing up to the second rise and storing in the fridge overnight. Bake in the morning.
