- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 1 cup shredded cheese (cheddar or mozzarella)
- 4 large tortillas
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat and sauté the mushrooms until they are soft.
- Add the spinach to the skillet and cook until wilted. Season with garlic powder, salt, and pepper.
- On one half of each tortilla, layer the mushroom and spinach mixture, then sprinkle cheese on top.
- Fold the tortillas in half and place them on a baking sheet.
- Bake in the preheated oven for 10-12 minutes, or until the tortillas are golden and crispy.
- Remove from the oven, cut into wedges, and serve warm.
Notes
- Feel free to add other vegetables or proteins to the filling.
- Serve with salsa or guacamole for extra flavor.
- These quesadillas can be made ahead of time and reheated in the oven.
