Description

Baked Spinach Mushroom Quesadillas are a delicious and healthy twist on a classic dish, filled with savory mushrooms and fresh spinach, all baked to perfection.


Ingredients

  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 4 large tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat and sauté the mushrooms until they are soft.
  3. Add the spinach to the skillet and cook until wilted. Season with garlic powder, salt, and pepper.
  4. On one half of each tortilla, layer the mushroom and spinach mixture, then sprinkle cheese on top.
  5. Fold the tortillas in half and place them on a baking sheet.
  6. Bake in the preheated oven for 10-12 minutes, or until the tortillas are golden and crispy.
  7. Remove from the oven, cut into wedges, and serve warm.
