Instructions
- Preheat the oven: Heat your oven to 350°F (175°C) and grease a muffin tin to prepare it for the batter.
- Mix the ingredients: In a large bowl, combine the rolled oats, milk, yogurt, honey, eggs, baking powder, cinnamon, vanilla extract, and a pinch of salt. Whisk until well blended and smooth.
- Fold in the berries: Gently incorporate the mixed berries into the oatmeal mixture, being careful not to crush them.
- Fill the muffin tin: Evenly divide the mixture among the muffin cups, filling each one about three-quarters full.
- Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the edges turn lightly golden, and a toothpick inserted into the center comes out clean.
- Cool and enjoy: Let the cups cool in the pan for a few minutes before removing them. Enjoy warm, or allow them to cool completely before storing in an airtight container.
