Description

Ingredients

  • 200g feta cheese
  • 300g pasta (penne or fusilli)
  • 500g cherry tomatoes
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange the cherry tomatoes around a block of feta cheese in a medium-sized baking dish.
  3. Drizzle olive oil over the mixture, then sprinkle salt, pepper, and minced garlic.
  4. Bake for 25-30 minutes until the tomatoes are blistered and the feta has softened.
  5. Cook the pasta in boiling salted water until al dente, reserving a bit of pasta water.
  6. Mix the baked feta and tomatoes, then toss in the cooked pasta, adding reserved pasta water to reach desired consistency.
  7. Finish with fresh basil before serving.
