- 2 cups broccoli florets (finely chopped)
- 1 cup breadcrumbs
- 1 1/2 cups shredded cheddar cheese
- 1/3 cup grated Parmesan cheese
- 2 eggs
- 2 tbsp all-purpose flour
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- Cooking spray
Instructions
- Preheat your oven to 400°F (200°C).
- Steam your broccoli florets until tender-crisp, approximately 3-5 minutes, then cool and chop finely.
- Mix the chopped broccoli with breadcrumbs, cheddar, Parmesan, beaten eggs, flour, garlic powder, onion powder, salt, and pepper.
- Roll the mixture into 1-inch balls and place on a prepared baking sheet.
- Bake for 20-25 minutes until golden brown. Broil for the last 1-2 minutes for extra crunch, if desired.
- Cool slightly before serving with marinara or ranch dip.
Notes
Make ahead by preparing mixture and refrigerating for up to 24 hours. Air fry at 375°F (190°C) for 10-15 minutes for a quick cook.
