- 2 cups peeled and diced apples
- 1/2 cup brown sugar
- 1/4 cup all-purpose flour (for streusel)
- 1/4 cup rolled oats
- 1/4 cup unsalted butter, softened (for streusel)
- 1 teaspoon ground cinnamon (for streusel)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, mix the melted butter, eggs, and milk until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the diced apples gently.
- In a separate bowl, prepare the streusel by mixing brown sugar, flour, oats, softened butter, and cinnamon until crumbly.
- Fill each muffin cup with batter and sprinkle the streusel topping generously over each muffin.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For extra flavor, add chopped nuts or raisins to the batter.
- Store muffins in an airtight container for up to 3 days.
- These muffins can be frozen for up to 2 months.
