- 3 lbs beef shoulder
- 2 cups apple cider
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 tbsp olive oil
- 1 tsp thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Preheat the oven to 325°F (163°C).
- In a large Dutch oven, heat olive oil over medium-high heat.
- Season the beef shoulder with salt and pepper, then sear on all sides until browned.
- Remove the beef and set aside. In the same pot, add onion, garlic, carrots, and celery, sautéing until softened.
- Return the beef to the pot, add apple cider, thyme, and bay leaf.
- Bring to a simmer, then cover and transfer to the oven.
- Braise for 3-4 hours, or until the beef is tender.
- Remove from the oven, let rest for a few minutes, then slice and serve.
Notes
- For a richer flavor, use a dry apple cider.
- Serve with mashed potatoes or crusty bread to soak up the sauce.
- This dish can be made a day ahead and reheated for better flavor.
