Ingredients

  • 3 lbs beef shoulder
  • 2 cups apple cider
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 tbsp olive oil
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat.
  3. Season the beef shoulder with salt and pepper, then sear on all sides until browned.
  4. Remove the beef and set aside. In the same pot, add onion, garlic, carrots, and celery, sautéing until softened.
  5. Return the beef to the pot, add apple cider, thyme, and bay leaf.
  6. Bring to a simmer, then cover and transfer to the oven.
  7. Braise for 3-4 hours, or until the beef is tender.
  8. Remove from the oven, let rest for a few minutes, then slice and serve.

Notes

  • For a richer flavor, use a dry apple cider.
  • Serve with mashed potatoes or crusty bread to soak up the sauce.
  • This dish can be made a day ahead and reheated for better flavor.
