- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 8 small corn tortillas
- 1 avocado, sliced
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Heat olive oil in a skillet over medium heat.
- Add diced onion and sauté until translucent.
- Stir in minced garlic, cumin, and chili powder; cook for 1 minute.
- Add cooked lentils, salt, and pepper; mix well and heat through.
- Warm the corn tortillas in a separate pan or microwave.
- Assemble tacos by placing lentil mixture on tortillas, topping with avocado and cilantro.
- Serve with lime wedges on the side.
