Ingredients

  • 1 cup cooked lentils
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 avocado, sliced
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced onion and sauté until translucent.
  3. Stir in minced garlic, cumin, and chili powder; cook for 1 minute.
  4. Add cooked lentils, salt, and pepper; mix well and heat through.
  5. Warm the corn tortillas in a separate pan or microwave.
  6. Assemble tacos by placing lentil mixture on tortillas, topping with avocado and cilantro.
  7. Serve with lime wedges on the side.
